Hello, I am new to Sesame and to this forum:
How do you transfer many  Excel sheets to Sesame, if  some fields on your Excel sheets are not always the same ? Is there a "batch import" function ?

There is no batch import facility.  You can import one CSV file (ASCII file) at a time, into a pre-existing Sesame database/form.

The Excel spreadsheet needs to have a formal structure which must conform to the fields into which you are importing the data.

You can "skip" fields/columns in your CSV file from being imported into Sesame.

You can save import specs for re-use.
