EDIT COMMANDS (SHIFT F11)

Can I disable the Shift-F11 command?  A lovely person accidentally copied one record over another record somehow.  I'm assuming she did the F11 and Shift-F11 by accident.  This is deadly for us.

Will just hiding these commands from the menu tree disable??

Hiding the menu tree commands does not disable the keyboard shortcuts.

She may also have done one of the Ditto commands, like Shift-F5. And ignored the warnings that she was about overwrite a record. And then committed the record. Sesame 2.0 has the ability to disable certain keystrokes, but if a user is working that hard to type bad data over good, you'd almost have to disable the keyboard entirely. You may be better off putting in validation On Form Exit that refuses to save the record if the information in the record fails the validity checks.
