Ampersand in an element label?

What's the trick to get an ampersand ("&") to show up in an element label?  I'm getting an underline instead.

Double it up. So if you want the Label to show as "Save & Exit", the actual Label needs to be "Save && Exit".

Off the top of my head I know it is required for the @ symbol as well.

You can use the "&" on your button labels to make Hot Keys. 
The Underline actually makes a HotKey to be used with ALT key.

Suppose you have a button on your form to show Table View.
Make the label &Table View
This will result in Table View on your button. 
Now you can use ALT-T from keyboard to show the Table View vs. using the mouse.

Or you could:
Make the label Table &View
This will result in Table View on your button. 
Now you can use ALT-V from keyboard to show the Table View vs. using the mouse.

Hey, that's cool too, Bob!  What happens if the user has multiple forms open (tabbed across the bottom of the screen) and the hot keys are assigned to different tasks depending on the form?  I assume the form in view would have control?

Not just view,  The form that has focus gets the hotkey. It works great as long as the user understands were they are in the form. I find new users get a bit confused at first when a form view subform is displayed.

Subforms are a bit of an advanced topic for me, and I haven't set any up yet.  Still working on my main forms.  I need some more of Erika's training or, maybe even better, to get my hands on some applications that use them so I can dissect them and see what they're all about.
